For me I'm only interested in ones that you can comfortably get to and then back again by train in in day. These are Cromer, Sherringham, Lowestoft, Great Yarmouth and Felixtowe. You can just about do Southend and Margate or Brighton but they take a lot more doing. Places like Wells and Blakeney are very nice but I can't be bothered to get bus as well as a train.
I like Cromer and Felixtowe because they feel like proper places, not tourist towns.
